Should I buy eggs or wait it out?

Wow Cheeka, I didn't know celiac disease was so nasty. I'd only heard about the intestinal problems from eating gluten, but having to worry about flour dust and brain lesions, that takes it to a whole new level. Not fun. Not only do you have to deal with the physical problems of the condition, but also the stress of worrying about inadvertently coming in contact with wheat products. Rant away any time you need to.

I found brown rice bread and pasta, and yes it is expensive, which makes me eat even less, so I guess that's better for me in the long run. I chose to focus on wheat exactly because it is so insidious; keeps me from eating a lot of stuff that I really don't need. We eat a lot of rice and potatoes and trying to add in quinoa more often, so with all these options I'm not feeling deprived without bread. Cookies... yeah, a little deprived, but I'm trying to stay strong! I've been fortunate to never have any allergies, but am finding that my system is a bit more sensitive as I get older. (I've got you beat by a year!)


Fortunately eggs are okay to eat.

(Too bad for you, OK, though I've heard eggs from free ranged chickens are lower in bad cholesterol. Less corn, more grass.) Strangely enough I got 9 today! Must have missed some yesterday.

Are they still saying eggs are bad for you? I tend not to listen on that one since the other benefit are so great, well, with healthy chickens anyway....I thought you made your own cholesterol, not adsorb it like triglycerides....the real killer. Oh well, if i stopped eating all the food they say to avoid, I'd starve. Cheeka, they (the Dr) are trying to dx my gkid with celiac. And lactose intolerance...I don't think she fits the mold, at least I hope not...very difficult thing to deal with, I feel for you. Not only do you have to avoid wheat, stress isn't helpful either. Thank goodness for chickens, great little stress busters there.
 
yes, found out when I was 22, but i was plagued by all kinds of digestive problems forever, thing is, i was born with it, but it didn't fully present at birth, celiac babies smell funny, so if you didn't find out right away, you might not have found out for years and years, and all those years and years, eat the wrong food... nowadays, they know more, and test kids who get lots of stomach aches, or weird rashes, or who are smaller in stature than the rest of the family...

I got to take this most fabulous awesome trip to Italy last year... and eating there was so easy ~ you'd think in the land of pizza and pasta it might not be so slick... however, they are very well educated about celiac, every Italian citizen has had the ability to be tested and every baby born in Italy is tested. GF food has come a very long way in the past 26 years that I've been eating GF... most specifically the last 5 years ~ major strides, not just palatable food, but delicious food. so I had the most amazing pasta dishes in Italy... I have to go back someday... hopefully soon!

.. I am glad to hear you get to eat italian, omgosh thats the good stuff!!! I think back on friends from childhood that had the stomach aches and missed school. This is one of so many reasons i attempt to raise/grow/make our foods here. I want to know whats in them, how and what it ate or fed on, and make sure every family member can enjoy the harvest.

When I went into the coop thismorning, I saw the same hen chewing on her rubbery egg shell. That is twice this week. I don't care. She seems healthy, and she is older (as I have mentioned a few times before). I reached under her (anyone else feel weird doing that?) and put the other egg in a new box. So far I have had girls lay in one new box, but they decide to lay their egg in the usual box. I only expected to collect three eggs, and wasn't expecting all three for another hour or two.
So.... I just went in, and not only did I have an egg in the other new box (I am pretty sure I only put an egg in one of them

) but I had FOUR eggs to collect. I had a perfect day!!!!!

It must have been the celery yesterday.

I got 6 yesterday, 2 from the morning and found the other 4 under Violet when I moved her last night. I did decide to put her with everyone else in the end... so ... she grumbled a little bit but stayed put with everyone.

tonight, I got home a few minutes later than last night... and the roost is intact, yet empty. they are all roosting in the back, except for... Violet... she was keeping the 3 eggs from today nice and toasty for me... she grumbled again about being picked up, she was so warm... but I brought her in to the enclosure and plopped her next to Si. they are all in a different order tonight, little Peach has herself all snug between Rose (RIR) and Royce. I almost couldn't find her, as Rose had her wing over her... awwww

W4W, it's not easy to avoid wheat, the stuff is insidious! it's in so many things that you wouldn't imagine it would be... I'm so sensitive, I can't even eat the stuff that is manufactured in the same facility/machinery as wheat products. I wouldn't dare walk into a bakery ~ microscopic wheat flour dust might be in the air! Celiacs also cannot have barley or rye. Spelt flour is a cousin of wheat, really good, but not suitable for celiacs... grrrr... but might be good for you and your family to try. I use lots of corn flour, rice flour is okay for lots of things but is very dense for baking, stuff turns to brick... bread/cakes made from tapioca flour are great when eaten fresh from the oven, but once the item is even a few hours old, it becomes sandy in texture... I don't bake a lot, I gave up a long time ago... Udi's brand breads are fabulous if a bit pricey, and Tinkyada brand pastas can't be distinguished from wheat pasta, but at $3+ lb, also pricey... bread and pasta are luxury foods for me... the bread is .50 cents a slice minimum, and as much as $2 (for one bagel) I eat a lot of beans, and veg... GF baked goods are usually loaded with fat and sugar to make up for the missing gluten, doesn't help the waistline... but if you can convince your son to avoid it for a while, and he improves... whether or not he gets tested, it would make sense to limit it as a lifestyle. my younger brother is not a celiac, but he is wheat intolerant, barley and rye don't bother him, but give him wheat and watch out! he ate pasta at a restaurant and started blowing farts that made my eyes water!
for me... going GF was necessary, but not a cure. at this stage, I've got advanced secondary celiac, with lesions on the brain, a severe B-12 deficiency that is a perfect MS mimic... that caused some issues with my docs, they were so sure that I had MS and was misdiagnosed 26 years ago... but it's not... I can eat things with B-12 til the sun comes down, but my body will not absorb one drop of it. So... I get a shot of it at least every month, sometimes more often if my level won't come up. B-12 juice really hurts when it's coursing through a muscle, hurts for 18 hours... the cortisone shots are for anti-inflammatory purposes, those hurt so bad... I try to avoid inflammatory foods, (mostly the nightshade plants) as they don't make me feel good either...

guys, they say eggs are bad, bacon is bad, it all causes cancers, etc... my gramma made it to 94 on eggs fried in bacon fat every morning. She passed of just plain old age, the coroner said her body just stopped working.. but she also ate tomatoes right off the vine like an apple. Ate homemade yogurt with fresh fruit for lunch.... Made her shrimp boiled in beer. Amazing beautiful German lady... I guess its just a balance of what you eat and main thing, if its right for your body. If it isn't, you find what is and eat it...
I don't pay attention to the news when they say "eggs cause cancer". I assume that one of the big producers are starting a new campaign to increase sales. I am going to follow what Gramma taught me

I'm not going to stop eating eggs. This is just temporary to get the numbers closer to normal. I'll do anything to keep from taking medication. So right now i'm on a mission to get the cholestrol lower. Once I do moderation will be the plan. Currently I am building raised garden beds to get ready for spring. Does anybody do square foot gardening? I tried square foot gardening on a small scale last summer and was impressed with the results. Even grew enough for the chickens and nothing gets wasted. With all of the wonderful compost produced by my little chicken factory i'm really looking forward to getting started on a much larger scale in the spring. I may have to get more chickens to keep up with the demand for compost....lol...thats right justify it

I'm with you. My grandma made it to mid 90 too and produced and raised 10 kids along the way. Poor as dirt so they ate whatever they could come up with.
