I was grading both ways

1/4 sumatra over a thai splanger hen.

yes fowlsessed is correct ........... i was thinking about what i know is working...... but going with your line of thought ; why not go with the Malay as i think you can find them to be the tallest of orientals(i've heard some are game) , probably the tallest of all chickens (but there is always something out there that i don't know about) .
If you need american blood I've seen some tall ones in sweaters , kelso , hatch & roundheads .... .
I know the hen side will give you what you want (like speed) physically . As suggested do both ways (i've done this before and it's amazing the difference in them .... yet with good blood they still could get the job done(just according to what you are looking for) .
Remember In a search for height you will be giving up some characteristics .... think about what matters most to you and proceed carefully .

I rather quote better.
Thai hen had it some shamo influence she was around 5 lbs I believe . The other oriental was 6 lbs
The sumatra rooster I used was 4,1/2lbs most of the offpring on the roosters side were above the five lbs some came a little bit higher but the weight was pretty much the same.
