Thanks everyone! I was just outside with them an hour ago and she was absolutely perfect. In fact, she seems much friendlier towards us than she was before all this happened. 
I don't think she's laid yet but it's hard to know... We have 8 chickens and there are only 3 that I know for sure are laying because I've witnessed them go into an empty nest box and come out 20 minutes later and there's a nice warm egg. :/ I am also uncertain of her being the "mysterious double yolk layer" because we got another dark brown double yolk egg -laid by Big Mama (Cuckoo Marans)- during Pepper's confinement.
