Obviously, we are in disagreement here, but I see no disagreement in my grammar. In my sentence, 'that' is modifying 'sort', not 'observations', so it is correct. If all of the observations are the same kind, then 'sort' is singular, no matter how many observations have been made. (And if I know Sour, he probably has made lots of observations!)

To make it clearer, let's substitute cookies for observations.

"You've got chocolate chip cookies? I've always liked that kind!"

You wouldn't say, "those kinds," however many chips or cookies were involved, since they are all the same sort.
