The yeasts in fermented feed are good yeasts, different from moldy food. The smell is completely different. Mold also is fuzzy and can be white or black or light green. Yeasts are not visible.

There is a scum that can form on the surface, called "scoby", and it appears slightly white, but it's not fuzzy. That is what you stir back into the feed as it ferments. It's good.

Stirring the mixture a couple times a day keeps the molds from forming and allows the good yeasts to multiply. Google fermented feed and you'll learn lots of good information. I've been feeding my flock fermented feed for around ten years. Even new baby chicks get it.

The vet agreed with you on the probiotics, and he also gave them a stronger antibiotic since apparently it was a nasty infection and what I gave them wasn't cutting it.
 
Why are you giving them antibiotics starting the first few days of live? This is not a good idea.
 
Not all Vets are equal, so try to make sure he really works with poultry. Proof and history of practice. And not just prescribing medication to get your money. Or it will be your loss.

He breeds purebred chickens and other birds and is a specialist in birds who studied in my country's foremost university, he's the one who sold me my parakeet and I'm in several groups with him where he is continually showing off the chickens he's bred. He's the real deal. ;)
