Well, I was going to say 3 but you don’t have the width for it. I’d build 2 that spanned the total 31”. That way when you have one hen go broody she can have her own box and the others will have a wider box to cram into.

A cardboard box makes as good a nest as anything.
I have an open aviary type coop.
We get torrential rains in Miami, usually from the east but at least a few per week from the west so most of the coop gets wet. We have excellent drainage and it’s very hot so it dries completely very quickly. The nesting box has to be protected from the rain and be of materials which withstand rain.
