Might have dog hair and duck poo in it.. but we are deeper than a bottle cap!

Happy Easter back at you all....

We did Easter dinner yesterday. Just: a small standing rib roast, Rosemary infused roasted potatoes, Deviled eggs, and ambrosia. Mom raved about the potatoes and had seconds... This woman will turn her nose up at the drop of a hat....

Last time I did rosemary in a dish I chopped it as fine as I could. She picked every bit out.


Just took new potatoes the smallest I could find in the bin.... Quartered them then salt and pepper and garlic tossed along with some very good fragrant olive oil.... I then took three sprigs of Rosemary and laid them on top of the potatoes. All in a plastic container, no water, and NUKED them for about ten minutes... LOL. By not chopping the rosemary I could just remove them after the steaming process.

Then I tossed them in a skillet to make one layer and had my son drizzle the beef fat from the rib roast over the top....

We are heavy sour cream useres... they didnt need or want sour cream.... yay.

OH and the deviled eggs were awesome. I learned if you put a bit of baking soda in the water when you boil them the shells just slide off like jackets. Dont know if it will work on fresh eggs but I want to try it. I do the "bring it to a boil and shut off the gas and pop a lid on it" method. Not a green tint on any of them and perfectly done..... no wet parts.

Grandmas recipe calls for mayonnaise, Mustard and a dash of vinegar. The sprinkle paprika on top for color

My son is ANTI Mayonnaise... and if he finds that its in something he will make faces and taste but wont relish it. So What I did this time was very lightly break up the yolks without smashing. Poking a fork straight down through the yolks is much like using a knife to break them up...

Then I put the mayo in and cut it through... just enough to pull it all together. White vinegar because I just wanted the bite and no flavor added... SALT and pepper. and Hungarian smoke paprika all mixed in the eggs.

Again a hit. Grandma took credit for the eggs "I taught her how to cook" ... LOL.

I would section just for a couple of days till you are certain all the chicks are hatched... put a nice deep pile of bedding under the nest at that landing spot incase one falls out. Remember they are good with no foood for about three days.

Thanks. I have my one girl who was trying to take over the nest put in cage. I am not seeing anyone else bothering them. I think I am just going to keep an eye on them and put down a lot of shavings.

I haven't heard the chick today. I am sitting on my hands so I wont move them the next few days. I so want to peek but I will let them have their own lockdown time.

Oh, church....

HAPPY EASTER everyone! I am a week behind y'all, so this Sunday is Palm Sunday for me... and I forgot my camera, so did not get any cute photos of the kids with their palm branches and the procession around the church. Man.... just frustrating.
 
Talking about batty.... I took the lid off of my incubator this morning and then went to church WITHOUT putting it back on!!!

It was off for about 4 hours!!! And the heater part is in the lid.... so no lid, no heat.... just eggs out in the open in a cool room.

It is a BUNCH of eggs too... all of my fancy super expensive eggs were in that open incubator!! I had maybe 50 or more eggs in there

A chick! A chick! I have an Easter chick! I guess my broody fooled me and hid an egg. I can't figure out how it would have hatched so early otherwise. Both girls are clucking at it and I actually got to see it's little head. It is a Phoenix or Phoenix/Dorking - I didn't see legs to see color, but it is chipmonk striped and has a very distinct head triangle which indicates GIRL!!

I hope she has siblings soon! They weren't supposed to be due until Tuesday. I am doing all I can to keep my hands off until Tuesday night/Wednesday Morning. It is so NOT easy!!

I am Eastern Orthodox Christian.... and we calculate our Easter based on the same stuff as the rest of you'll do, but also look at when Jewish Passover fell. Than means that every so often we have Easter the same time as y'all, and some times later or earlier.

Me, I totally prefer having our Easter AFTER yours... because then I get to buy all of the Easter stuff on sale!

Happy Happy Happy Dance.... Kid came home chirping..... WHEW.

The hours are super what he wants.... four days a week and four hours a day.... five to nine.

If he delivers pizza it will be as a fill in... All the guys in the kitchen told him the work load is mostly sitting back cleaning straightening stuff then a flurry of orders will come in and they will be back to cleaning and puttering. He announced "I can say I have made TWO pizzas now"

LOL. this will go very very far toward him getting self confidence... minimum wage here is 9 bucks so that would be 170 ish a week.... and a skill... woo hoo.

His best friend has a bachelors degree in Computer programming with an emphasis on Artificial Intelligence. Yet he moved from San Diego following a girlfriend to Montana... He got a job at McDonalds.... and now has been promoted to a managerial position like within about six months.
