Boy, that could be a lucrative business! Thanks for the info. I was just curious anyway. I am not wasting my time processing Silkies. I tried some Polish cockerels this summer just because I needed to get rid of them and they would have been just as well of in the compost heap. They dressed right around 2-pounds and there wasn't enough on them to do anything but simmer them into soup stock.
 
I have a mean bantam rooster I am tempted to eat, just not sure there is enough meat to make it worth the effort.

We have an asian superstore here (PacNW). I'm going to see if there is any silkie available! Yikes! Maybe only at the mom and pop stores....
 
Aside from the crowing I think the best way to tell sex is to pick them up. The pullets seems to be fatter than the males. Males have less meat around their breast bone.
 
Just get the Jack La'Lane Juicer and put them in there with some veggies! Drink to your health.

Don't think I'll get to eat one anytime soon, DH doesn't like the look of them when they are alive and I'm sure his opinion wouldn't improve when he saw one dressed for dinner!
