I think the three main downsides of skinning are:
1) not eating the skin, as in some recipes it is delicious
2) not being able to stuff things under the skin, as some recipes/methods require such
3) the bird isn't as attractive to most people. You can see random bits of fat tissue, you can see the muscles which may appear gruesome, and you can see, well, everything.
This, for example, isn't exactly "market pretty" but still good to look at when you're used to it.
