Slaughtering Ducks

So I'm slaughtering a few (3-4) ducks in about 6-8 weeks so I wanted to know what kind of knife would work best and if there is any "test" to see if the knife is sharp enough because I really wouldn't want the ducks to go through any undue pain. From my research, it looks like boning and paring knives work best but I would like to know for sure. Thanks!!
 
100% truthfully and honest my favorite knife to use is an olfa knife. Its so sharp you dont have to pull or stress the meat at all
And ive tried and own alot of knives

And i dispatch with a sharpened fiskars hatchet

After re Reading your post i assume you are going to slit the throat the drain the bird, ive tried all the usual ways of dispatching birds and the most compasionate way seamed like the axe

I could only pray to go as fast as that
 
We use a filet knife. However, I’m seriously thinking of switching out our set up if the hubby (who does the actual dispatching) agrees with me to using an axe. We’ve had a couple of animals that seemed to not . . . die. We knew he hit the jugular but . . . Yeah.
