Smoking before Rigor Mortis?

Thinking about doing a couple Buffs tomorrow to go along with the Turkey, thinking about throwing them on the smoker probably 15 minutes after killing. Was wondering if, because of the nature of smoking, that rigor mortis might still set in before they are properly cooked. I know you usually have a very small time frame to cook a bird before Rigor does set in, but am unsure for smoking. Live in South Florida, so no cold climate here.

If smoking is a bad idea, guess I can just use the pressure cooker, haven't seen a cut of meat that thing can't make tender lol
 
No idea, I would thinking roasting would be fine if done in 90 minutes or so,,,Smoking takes so long I bet it kicks in before its smoked..
I know they say if you cook them right away you are ok,,
