i promised to post this when i had time, so here it is.
Sock It To Me Cake
Struesel:
2 TBL AP flour
2 TBL Unsalted butter, melted and cooled a bit
1/4 C. Brown sugar, packed
2 tsp Cinnamon
Cake:
2 1/2 C. AP flour
1 tsp Baking powder
1/2 tsp Baking Soda
1 tsp Salt
2 C. Sugar
4 Large eggs, at room temp
1 C Sour cream, at room temp
1 1/2 tsp Vanilla
2 Sticks of unsalted butter, melted and returned to room temp
Glaze:
1 1/4 C. Powdered sugar
2 TBL Milk
1 1/2 tsp Vanilla
Preheat oven to 325* Spray 12 C. Bundt pan with non-stick spray.
Combine all dry ingredients in streusel and then stir in the melted butter until mixed well. Set aside.
To make the cake, combine flour, baking powder, baking soda and salt in a bowl. In a large bowl, whisk sugar, eggs, sour cream and vanilla. Slowly add the butter and mix until emulsified. Add dry mixture and whisk until just combined. (Do not overmix!)
Pour half of the batter into bundt pan. Crumble and sprinkle the streusel mix on top of batter. Top with the rest of the batter.
Bake in preheated oven for about 50-60 minutes or until toothpick inserted into center comes away clean. Cool in pan for 20 minutes then invert onto cooling rack placed on top of a cookie sheet.
While cake is cooling, mix ingredients for glaze and then drizzle on top of warm bundt. It will harden as the cake cools completely on the cooling rack. (about 2 hours)
