Soft cookies

Here you go-


Eggnog Cookies

1/2 c crisco
1/2 c butter
2 c sugar
1 c eggnog
1/2 Tbsp nutmeg
1 Tbsp baking soda
5 1/2 c all purpose flour
extra flour to help with rolling
egg white
colored sugars for decorating
red hots for decorating

Cream crisco, butter and sugar. Add the eggnog, nutmeg and baking soda. Add flour in slowly. About halfway through the flour you will want to switch to a dough hook. When it gets to the point it's not sticky, start working it by hand. Pat out flat and roll out on floured surface to about 1/4" thick. Cut out. Brush with egg white. Decorate.

Bake at 375 deg for 6-8 minutes.

Here is one for soft Sugar Cookies..

Ingredients:
3 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt 1 cup margarine, softened
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract

Directions:
Sift flour, baking powder, and salt together, set aside. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually blend in the sifted ingredients until fully absorbed. Cover dough, and chill for 2 hours.
Preheat oven to 400 degrees F. Grease cookie sheets. On a clean floured surface, roll out small portions of chilled dough to 1/4 inch thickness. Cut out shapes using cookie cutters.
Bake 6 to 8 minutes in the preheated oven, or until edges are barely brown. Remove from cookie sheets to cool on wire racks...

Here is one for a softer Peanut Butter cookie-

Ingredients:
2 sticks Butter
1 Cup Brown sugar
1 Cup White sugar
2 Eggs
1 1/2 Cups Peanut butter
2 1/2 Cups Flower
1 Teaspoon Baking soda
1 Teaspoon Vanilla

Directions:
Cream together butter, sugar and peanut butter then add eggs, soda, vanilla and flower.
Bake @ 350* for about 12 minutes or till golden brown...

These cookies are very cake-like and soft.
Sugar Cookies

1/2 cup shortening
1-cup sugar
2 eggs
2 tablespoons heavy cream
1-tablespoon vanilla
3 1/2 cups flour
2 teaspoons baking powder


1. Combine flour and baking powder and set aside.
2. Cream shortening and sugar until light and fluffy (about 6 minutes).
3. Add eggs, cream, and vanilla and beat well.
4. Stir in flour mixture by hand.
5. Place in a container and chill until dough is firm enough to be rolled out and cut into shapes.
6. Roll out with powered sugar instead of flour.


Bake on a greased cookie sheet at 350° for 8 minutes or till very lightly browned around the edges.

These are also soft...they remind me of gingerbread.

Molasses Cookies
(Janet’s Grandma’s Recipe)

3/4 cup shortening
1 cup sugar
1/4 cup molasses
1/2 teaspoon ginger
1 egg
2 cups flour
2 teaspoons soda
1 teaspoon cinnamon

Preheat oven to 375°

Mix dry ingredients together and set aside. Cream shortening and sugar together until light and fluffy.

Mix in the molasses and beat well. Mix in egg and beat well. Mix in dry ingredients by hand.

Make into 1 inch balls and roll in sugar.
Do not flatten.

Bake for 10 minutes at 375°.

These are super quick and easy and also soft.

Cake Mix Cookies

1 pkg. (18.25 oz.) cake mix any flavor
1/3 c. oil
1/4 c. water
2 eggs

Can add:
2 c. chips/morsels/or nuts if you like

Mix ingredients together with a wooden spoon, drop by tablespoon onto cookie sheet, then bake at 350°F for approx. 8-10 minutes
