I wanted a pie but don't do crust (Miss Prissy needs to fly out and teach me
)
I found a favorite pie recipe (If a member here posted it I want to give you credit!) and made my own topping.
Preheat oven to 375
Filling
2 c pitted cherries
3 eggs (I use 2 duck eggs)
3/4 c sour cream
1/2 c sugar
1/4 tsp salt
1/4 tsp almond extract
1/4 c sliced almonds
drain and mix cherries lightly with almonds. Pour into pie plate, quiche dish or casserole.
Beat eggs well. Add sour cream and sugar and beat til thick. Add salt and almond extract. Mix and pour over cherries.
Topping
Mix together well on mixer
1/2 cup each
brown sugar
white sugar
oats
sliced almonds
flour
and cinnamon to taste
When well mixed add a TBSP sized blob at a time of butter until it makes a nice crumble. Put evenly on cherries and bake for about 30 to 35 or so minutes or until filling starts to bubble and topping is nicely browned.
Alternatively, you can use pie crust and work lattice strips for the top. Just bake at 400 instead of 375 for 25 to 35 minutes.
