I've got a TON of it growing in the garden. Straight neck, patty pans, waltam butternut, acorn, pink banana, orange hubbard, you name it I'm growing it. Anyone got good recipes for these? My family isn't to big on it plain.

theres a joke in our neck of the woods that the only time we lock our cars is when its squash and zuchini season, or you might get in one morning to find it loaded with the stuff.

sorry, no recipes, but i had to share.... I lock my cars, b/c I'm not that big on squash
 
For any kind of yellow summer squash...

*slice thin
*rinse slices in colander (important step)
*while wet, add to bowl of SELF RISING flour (or plain flour with a little salt mixed in), put lid on and shake like crazy to coat well (you may have to do a little at a time to make sure they are coated well)
*fry in veggie oil until golden brown and crispy
*spread on paper towels to drain & sprinkle with salt if desired

Ive fixed squash like that before....it is soooo good. What I like to do is stir fry squash with some onions, add some crumbled bacon, sprinkle with cheese, put it in a warm tortilla to make a burrito, with a little sour cream. It is very very good, and you can add all sorts of things to it to make it different, diced tomatoes, whatever.

My wife scoops the seeds out, fills the hole with butter, cream and maple syrup, covers and bakes them.

If nothing else, winter squash are great for feeding to your chickens. They store well (unlike most vegetables, they like to be warm and dry - under your bed is the traditional place. No kidding.)

Smash one in the coop every once in a while. Fun for the whole family!

Here's an easy and delicious recipe for your butternuts.

Baked Butternut Squash

1 large butternut squash pared and cut into 1 inch cubes (remove the seeds and fibers)
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3 cup brown sugar
1/3 cup butter, melted
2 teaspoons lemon juice

Place squash in a 2 quart casserole or baking dish. Sprinkle with spices and brown sugar. Drizzle with melted butter and lemon juice. Bake uncovered in a 375* oven for 45 minutes or until tender.
 
I like to take the "boats" and stuff them with an eggroll type filling with ground chicken or pork. Cant find my recipe right now, but I never use it anyway. I just sautee shredded cabbage, bean sprouts and shredded carrots (you can use pre bagged coleslaw from the deli as a shortcut) in a hot pan with a little oil until its nice and tender. Take out the veg and add a little more oil. Heat that up and quickly add a dollop of grated ginger, garlic and pepper flakes. Stir that around for a second and then add your ground pork or chicken. Cook that up, then add the veggies back in. Toss in some scallions, baby shrimp, or whatever rings your bell. Heat thru and season with soy sauce to taste. Stuff that mixture into a slightly hollowed out summer squash and pop that baby in the oven at about, oh, 375 for 20-30 min. Or at least until the squash is cooked through. Slice and serve with soy sauce or sweet and sour on the side. Or you can use small patty pans and make a bunch of individual ones
