I am taking a small break now. Getting ready for Christmas, I am grating fresh coconut. I got the water out, cracked it up and pealed it. I am now grating to get two cups for a coconut cake recipe. It is an Emeril recipe--I bet he has a sous chef do this stuff...my hands are pretty tired out.
It better be a very tasty cake! (I have baked it before--it is good).
It is a very good plan to get things made ahead! Chocolate raspberry cheesecake should be very tasty!I have hand grated coconut before, and it's quite the chore! I have yet to find an Emeril recipe that I don't like, so I think you are safe. Let us know how it turns out!
I am baking 2 pumpkin pies right now, then I have to get the white chocolate raspberry cheesecake going. And yams somewhere in the middle of all of that. Trying to get as much done today as possible - then all I have to do is put stuff in the oven tomorrow and Thursday.

She gave me a fruitcake, that suprisingly doesn't look fruitcake-like. Mary made it, so I'm sure it's delicious. She gave me the cutest gift, but you'll have to wait until I can take pictures first. Mary made me promise to get a picture of it. She left with some jam and a jar of my honey. Her and Michael were really hoping for some honey!![]()
