Today my stove has been going non-stop, simmering the first of what hopefully will be lots of Maple sap. Since I have the fan running anyway, I made a batch of Agrodolce (balsamic pickled cipollini onions). They are cooked in a mixture of vinegars, sugar, peppercorns, and a bay leaf for about 20 minutes, then you can them in sterile glass jars and put them in a fridge for a few weeks. They are crunchy, sweet-sour, and reddish brown from the balsamic. The remaining pickling juice can be reduced down to a delicious drizzle, really nice mixed with oil for dressing.

Everything sounds good! Does maple sap=maple syrup?
 
Yes the sap is just starting to run. Last year I ended up with 4 pints. This year I tapped 9 trees instead of 6, but you never know how much sap you will get. Temps in the mid to upper 30s and sunshine during the day, and below freezing at night are ideal, but it is supposed to stay above freezing for a few days.
