No, not washed away. Just lots and lots of rain! Tons of snow in the mountains - I don't ever recall the freeway getting shut down so much. They were issuing voluntary evacuations near Tahoe for avalanche concerns.Have you northern Californian's been washed away yet?

Looks like a good recipe.I have a lot of ham hocks to use up, so I've been searching for recipes. Last night I made this Cuban Black Bean soup. It was very tasty!

There is one thing missing though. Add some salt when boiling them. Hocks are salty but may not release the salt soon enough.
Salt will keep the beans from falling apart and the skin will stay on. This is from the Test Kitchen where they run experiments to see what works and does not work.
Adjust for salt and pepper after cooking of course.
Try the salt next time. She likely did that but did not put it into the recipe.Interesting.
I didn't have any issue with my beans, but it did take a lot longer to cook than the recipe said. It cooked for 3 hours, but I did the quick soak of the beans, not the overnight soak.
When you cook them. It makes a difference in the beans even when I pressure cook them.Ron do you put the salt in the soak water or when you cook them?
