I have the Asian short ribs in the oven but I got a really late start. We'll be eating dinner just before bedtime!

I have news. My newest flock of Icelandics started laying! I didn't even have bedding in the nest boxes because I thought they were still too young. I went in today to fill their feeder and found four little white eggs, one of them broken. I cracked three and they are fertile! #4 went into the incubator.

The next generation of Icelandics arrives

Nothing yet from my young Swedish Flower Hens, but the one that was so lame is miraculously cured - 2 weeks of holding up a leg to walking without a limp. I am sooo happy!! They are such lovely birds.

I looked for short ribs again at Costco today but none to be found.

Yay for eggs!! Double yay for fertile eggs!

They had the perfect size packages of choice short ribs at Costco here.

Ask the butcher if they can get some in for you.

Thought this looked interesting, I may keep an eye out at the local thrift shops for possibilities - seems like you could line them pretty easily too.
