Those look yummy... not a fan of cheddar in them.... I like jack or cream cheese.... But thats me.
did you seed the Jalepenos? I get them at a japanese restaruant they simply split the jalepenos in half and remove the seeds and ribs.... then they stuff them with Crab meat.... Of course theirs are tempura fried but I suspect you could run with the first two ingredients.
Me I would do just a little cream cheese mixed with the crab to make it stick together and cook em like little Chile Rellanos... Maybe in something like a madeline pan....
