I made some bread last year using levain make from a freeze-dried Cali starter, some turned out quite tasty. I will try to reinvigorate what I have in the fridge, or still have some of the dried flakes and could restart. Not sure there are many wild-type yeast around here this time of the year, other than those that live in the house all winter.
