Stella's Social Club

I've mostly been lurking lately. Still dealing with a broken foot and my painful back issue which has finally been diagnosed as degenerating scoliosis. I never even knew I had scoliosis. Also, my son-in-law, who I love dearly, has been hospitalized on and off for the last couple of months with a failing heart. It is now looking like we're at the final resort - a heart transplant. My poor daughter is trying to hold down a high stress job and be a full time caregiver. And here I am, practically immobile and basically useless to help - very frustrating!

So very sorry. Being a caregiver is very difficult even for someone without a high stress job. Sending love and prayers for everyone.

Cranberry sauce, done.
Pumpkin pies, done.
Chex mix (husband request), done and 2nd batch in the oven because fingers can't stay out of it.
Dough for the rolls will be made tonight as the dough needs to sit in the fridge overnight.
Candied Yams are up next.

My mom is making the stuffing and potatoes, so I don't have to do that.

Tomorrow, all I will have to do is cook the turkey, make the rolls, make the butternut squash (I'm boycotting green bean casserole, I'm sick to death of eating it) and make the whipped cream. So, it will pretty much be a day of putting stuff in the oven. I love getting most of it done a day ahead, so much easier.

Then it's just setting the table. I've gotten much better at planning holiday dinners over the years.

Cranberry Sauce, done.
Pumpkin pies, cherry pie, and pecan tart, done.
Candied Yams, done.
Green bean casserole (2), done. Love me some green bean casserole!
Dressing, done.
Rolls, ready for the oven tomorrow.
Butternut squash and brussels spouts ready to roast tomorrow.
Giblets cooked and base made for gravy.
Turkey thawing.
Love my new kitchen but wow, I have had a work-out. My knee is yelling at me!



 
Sheesh, you went crazy on the pies! You are only having 3 people over. Be careful, tucker might be able to reach those pies!

My yams are done. A double batch of dough for butter horn rolls is in the fridge. Turkey is in there thawing. Not an inch of space left in my fridge, I need your huge one right now.
 
My stupid 8 pound turkey breast is still frozen after being in the fridge since Monday! Hopefully it will get busy during the night.

re: the pies. I am actually having four people over. And, I am sending a couple with Michael for his family gathering. I still have too many, but I love baking and testing my new oven. Finally we are starting to get in sync. I need to set the temperature 25 degrees lower for baking. I make a lot of food because I can send leftovers home with my sister and my parents. They love to make hot turkey sandwiches.

re: my huge fridge. I can give you the four inches on the bottom to the right of the turkey and that's it! It's full and there are no pies in there yet!

If I didn't have 20 yogurts in there things would be better. Plus a big jug of water. And all my flippin' condiments.

 
I'm not sure if I should show up at Kelly's or Mary's. Actually we are supposed to go to my sister's. My wife has become ill, I had to do the calves myself tonight, facing my nemesis alone.

As for choosing between Mary or I, we live fairly close, so you could show up at both!


The real reason I'm not leaving the house is it's a brisk 28 degrees outside. I do have to manage to get out there to take the dogs out and defrost the chicken waterers. It snowed a bit yesterday, but didn't last long.
