Stuffed Zukinee and green paper

Hello Friends, Here is a Syrian recepie, I cooked today I thought you might like to try.
Ingredients:

1- 15 medium size fresh Zuchini
2- 4 Green pepper
3- 1 cup of Rice
4- 1 cup of grounded Lamb meat
5- 1 table spoon of salt
6- 1 table spoon of Cummin
7- 1 tsp of Saffron
8- 1/2 Tsp of pepper
9- 3 cans of tomato sauce
10- some butter like 1/2 a stick.

First get the Zuchini and empty them from the inside using this devise

then empty the green pepper from the seed, by cutting a hole on top of it.

then mix the meat, butter, the rice, the salt, cummin, Saffron, and the pepper together, and then stuff the zuchinis and the green pepper.

Get a big kettle and put the tomato sauce in it adding 3 cups of water to it and let it boil.

then put the stuffed zuchinis and the pepper inside and let it cook for about an hour on medium or till the rice get cooked.

This sounds fabulous, we eat a lot of Lebanese and Morrocan food so I think we would love your recipe.

Two question though, is the ground lamb raw when I add it or should I cook it first?

and is tomato sauce the same as ketchup or the same as tomato puree, sorry in England we don't always have exactly the same ingredients as in the USA.

Cat, it's probably a smooth puree of tomatoes, comes in a can here. I'm not sure about the meat, but I know that stuffed peppers call for uncooked meat, it cooks with the rice. I like to brown it a bit first, but that's just me.

My MIL used to stuff and roll cabbage leaves with a similar mix, just different spices.

Our zucchini has quit producing (wilted up and died because of the heat) so now when I BUY it in the store people must think I'm friendless.
 
not to hijack the thread but here in England we call it courgette, I only know what Zucchini is because my mother and sister live in MN. It also took me years to figure out that cillantro is corriander, we call the whole thing corriander and every time I asked for cillantro in the shop they gave me a blank stare.

My mother used to make this with ground beef, and I forgot all about it because we don't eat meat, but I bet it would be delicious with Tempeh or even fake meat crumbles. Or smoked tofu! Yum!!!

I make a similar recipe. Only instead of medium Zuc's we always let one get to giant size on the vine and use it.
What I do is take the giant zuc and cut it in half length wise so you have two long halves. Then scoop out the seeds and steam in the oven until just tender. then remove and stuff w mixture (mounding it) bake, top with cheese & bake a bit longer.
I think any mixture that has ingredients your taste enjoys would work. We use hamburger, onions, peppers, corn, tomatoe sauce and bread crumbs. Will be trying this mix of seasonings though, thanks for the ideas!
