The problem with culling all the ones with red faces is it could be the best one you have meaning by is's overall qualities, your other sumatras could have way more problems then the sumatra with the red face. If you look at the scale of points in the American Standard of Perfection the most points you can lose is the shape of the head and the tail. you can not knock down a bird with only one little problem.

With years of breeding you will note that spending one or two generations on one thing can eliminate it completely. Then you don't have the issues of that problem and can focus on something else. It is a wise breeding tool, to not focus on too many traits at once. This does not mean forget type but not focus on for example: eye color, comb, spurs, face color, *perfect* tail angle, leg length, wing carriage... Etc) all in one year.
 
yes that is helpful cubakid that is how you get to that point generally.. but if the breeder that got your sumatra's from has already bred all the qualities down except the red face it dose not take very long to get really nice birds out. or at lest improve it.

Is it normal for a bantam Sumatra hen to be a little larger then her rooster? My hen is like a few grams heavier... But I'm thinking this because she's a good layer. Should I try to breed my hens smaller?
