One of the best meals I've ever had in my life was sushi. I went to the restaurant near my house and asked the sushi chef to make something for me from his imagination. I received a beautiful roll with tobiko (my favorite), soy sauce gelatin windows with watercress micro-greens inside, and tuna in the middle of the roll. It was a delicious work of art.
 
Our local fishmonger sells baby octopus salad (it's cooked). I tried it once and it was sooo rubbery. I couldn't stand it.

My fav sushi is tobiko served like this, but I also have a thing for sesame seeds, which are similar in texture:

OMG it is a wonder your "avocado" didn't take your breath away. Sometimes I think they should put little warning signs next to the mustard and wasabi.
 
my husband LOVES octopus salad, but he's had really good octo salad.
i love seaweed salad but it's really hard to get where we live (in the middle of NOWHERE).

oooooh, spicy tuna...one of my faves too! gosh i want some. in bay city there is a REALLY good sushi restaurant. they have the best squid.
i love eel too. it's awesome. basically, i will eat any sushi or sashimi. i like all of it. i've never not liked any i've tried.

the crab is cooked. I've never even seen raw crab at a store they cook it once it's out of the ocean, crab goes bad really fast if it's not cooked right away. Ever watch "Cast Away" with Tom Hanks? When he first gets to the island and is trying to figure things out he catches a crab, tried to eat it raw and it was just slime... has to be cooked first. And if the shrip is pink it's been cooked too.

my favorite now that's a difficult one. Tuna and salmon sashimi is good stuff but spider rolls are yummy too!
 
Wasabi is meant to be diluted with soy sauce... and yes, it's god-awful hot!! I like it, but find that it overwhelms the delicate flavor of sushi. I eat my sushi sans soy sauce or wasabi - I prefer it the way the chef made it.
