Sweet potato fries?

Heres the recipe we use .....


Ingredients

  • 4 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon ground cinnamon
  • 2 sweet potatoes, peeled and cut lengthwise into 1/2-inch wide strips
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
Directions

Preheat oven to 425 degrees F.

In a large bowl, mix together olive oil, paprika and cinnamon. Toss the potato strips into mixture, to coat well, and spread onto baking sheet in a single layer. Sprinkle with salt and brown sugar.

Bake for 30 minutes, turning every 10 minutes.
 
We eat paleo at our house so we eat these instead of regular fried fries, we love them. Serve them with chipotle mayo YUMMM!

4 medium sweet potatoes or yams (we like both)
1/4 C olive oil (we like coconut oil as well)
2 tsp of cumin
1/2 tsp salt
1/2 tsp pepper

Preheat oven to 425 (you will need two cookie sheets) toss potatoes with oil and seasonings (I use a gallon baggie and give them a good shake, you could do this in a bowl as well) I like to use parchment paper on cookie sheets but you don't have to and bake, turning every 10-20 minutes until nice crispy brown. They don't ever crunch like regular fries but we love them anyway!

And if you want to try something else, try slicing them about 1/4" thick, coat with a little oil, salt & pepper. Then put them on the grill.

I also shred them and make potato latkes (spelling?) as I love them and really need to get away from white potatoes.

thanks for the mayo idea. I am about to make fresh mayo here and I have some fresh jalapenos I have minced...hmmmmm that would be different

This is a Paleo recipe from the same cookbook, we really like this.

1/2 Cup Homemade mayo is best
1/2 Cup cilantro
1 clove garlic
2 tsp.Olive oil (I don't use)
2 chipotles in adobo (I use 1/2 so the kids will still eat it)
juice of one lime

Combine in a food processor until blended well, refrigerate until needed.
