Duck eggs are absolutely magnificent. I refuse to eat any chicken eggs now, unless I've raised them and need to get rid of them, haha! Duck eggs are so much better for you and creamy and fluffy and delicious. More protein and less sodium = healthy and delicious!!

My dirty secret*: I wish my ducks would stop laying fertile eggs! I miss my duck egg omelets!

I eat fertile eggs EVERY day. It doesn't make a bit of difference. You just gotta collect them daily and stick them in the fridge. Voila!

How can you tell the difference in fertile & non fertile eggs?

I don't think there is any way to tell if an egg is fertile or not without incubating it and candling it after a few days to see if there is an embryo developing.
