Now I know I have gone over to the chicken side. My husband and I were walking around our property this morning when the sun was coming up. It was a deep orange/red color. Within a few minutes it became a light yellow. I told dh that the deep orange/red is like a country chicken's egg and the light yellow is the store egg color. He just looked at me and shook his head.

Do any of you feed the cactus fruit to your flock? I found out by sheer accident that mine love them! I made some prickly pear jelly, and had left over fruits, so I soaked em and sliced em in half. They ate em like they were crazy! So now I go along our back road, and with permission to the neighbors, and pick as many as will fit in the several five gallon buckets I have. I soak and split about 1 per bird a day. They will keep for a week or two in the buckets without showing any kind of rotting. Its free and has lots of antioxidants in the fruit. Thought I would share. You can use a pear burner to singe of the thorns, but I am lazy and just use tongs to twist them off and then soak them.

Uhhhhhhh no. I am fairly new to Texas so I haven't even considered it. I wouldn't even know how to get into the cactus. What does prickly pear jelly taste like? I love canning and eating homemade jams.

Its not a tart jelly, like mustang grape, which I also love. Its very mild and sweet, and a wholly different flavor. It does take twice the pectin and an extra three cups of sugar to set (and like 12 hrs of sitting in the jars, I panicked the first time I made it), and the peeling and such is a pain in the butt, but it is worth it, especially with the price of produce!! If you want the recipe PM me, and I can send it to you. Also, if you have mustang grapes, that makes a wonderful jelly as well. I am all about FREE! Oh, and welcome to our great state! Hope you wind up loving it as much as I do. Where are you from originally? The cactus, as long as you use the tongs, you never have to touch. Just watch for snakes. I live in a rural area, Pretty far from the nearest hospital, so I carry snake shot and a pistol when I go out alone. You can usually hear a rattler long before you see one if you go slow and watch.

In other news, we played our first high school football game last night. The team we played is over 2 hrs away, which means I'm running on about 5 hrs of sleep today. There is not enough coffee in the world...

Oh my, I can only imagine all the feathers!! I am running on low, my older children are in 6th, 1st and Kinder, and this was the first week of school. So of course the 1 yr old picked this week to get a couple more teeth and be up ALL NIGHT. So yes, there is not enough coffee in the world when you are sleep deprived, but I have fun trying to drink enough!

This is my second time in Texas. Around 1984, dh and I lived in the panhandle for a year (Skellytown). We moved to Houston about 6 years ago. We had to get away from the people and moved to the country 2 years ago. We are now in Heaven!! I loved Texas from the first time I stepped foot here. Texans are super friendly. When I would fly through Dallas, I always had Texans invite me to their homes. It is a great state!

What is mustang grape? Unfortunately you are 3 hours away from me or I would be on your doorstep with my boots on!
