Thanksgiving Cooking Countdown!

I got a batch of biscotti going right now, Tonight I'm going to peel and cut carrot sticks. They keep very well in water along with celery for the veggi platter.

I have the turkey and the goose out thawing because tomorrow I need to do the skin prick and boil of the goose for 1 minute on each side of the bird. Helps melt and drain some fat I heard so the skin will get crispy.

I am wondering, if anyone can tell me... Can I put my pumpkin filling in the pie crust tomorrow and just put it in the fridge to bake Wednesday night?! That would save a hassel. I want to bake my peach cobbler the night before too. I hate having meat and desert in the oven at the same time.

(Feed 12 people with the possiblity of a few friends stopping in just for desert!)

Oh my wow! Its TOMORROW!!!!

Not in panic mode yet, but heading in that direction... especially since hubby got sent out to BFE to work several hours away and won't be home until late. He's supposed to move furniture, and clean the downstairs for me while I do the cleaning of the upstairs and get the last of the prep work done.

Ok, now I'm panicking!

Anyways, I'm trying to finish cleaning up while I can, I have some cookie orders I need to finish for pick up on Friday morning as well. All this while I need to finish the pumpkin pies today, prep the dips, salt and pepper the turkey which better be done thawing, and go to the garden to get my carrots and radishes for tomorrow. I should have enough carrots and radishes done for the appetizer try. Maybe even enough to add to the roasted veggies for dinner. Been raining all week so I haven't checked.

Anyone else trying to bring their garden to the table!?
 
took my turkey out of the freezer on sunday and put it in the fridge

it was still frozen solid this morning when i took it out of the fridge


tonight i will make a mixture of melted butter, garlic, and sage and inject it into my turkey

then i will get softened butter and stuff it between the skin and meat (butter, galic, and sage)

then i will make a wood fire in my bbq pit and smoke the turkey uncovered for 3 hours (this keeps the main area of my pit low -- around 250 degree's F)

then i will wrap it in tin-foil and leave it on the pit overnight
 
We are doing a "superfoods" Thanksigiving Day Dinner!!

Only five of us this year....My BIL/SIL, Nephew and the two of us.

We have a 22 pounder that's been thawing since Monday in (and out of) the fridge.

Here is what I'm making today that will go in the fridge until tomorrow (I'm diabetic so you'll see a lot of low sugar food):

Stuffing with sausage, dried cherries, toasted pecans and cornbread - DONE
2 gallons brewed Black Tea - DONE
(low sugar) Pumpkin Pie - DONE
(low sugar) Blueberry Pie - DONE
Overnight Spinach Salad - DONE
Pumpkin Custard Yeast Rolls (I'm adding the pumpkin and using white whole wheat flour to a family favorite recipe) - DONE
Maple Yams - with sugar free maple syrup - Will have to wait 'cause there is no room in my fridge.
Cranberry-Pomegranate-Quince Compote - DONE
Puree Leeks for Walnut-Leek muffins. - DONE
Prepare the parsnips, carrots, leeks and celery to roast with the turkey. - DONE

Anyone else cover their turkey with cheesecloth while it roasts??

Don't forget to let your bird "rest" for at least 30 minutes out of the oven, it'll be juicy-er...cover it with heavy to foil to keep warm.

ETA: Oow! I think I'll use the crockpot for my sweet potatoes too, it will save on oven space AND on warmer plate space. ***Even better, I just remembered I have a divided crockpot insert somewhere....I'll put the yams on one side and the mashed blue potatoes on the other! yea! hot potatoes all dinner long!!

So far we have made four pumpkin pies. Still four more two go -- two cherry and two apple... Yum! I've got a lot of apples to peel.

The sweet potatoes are cooked and are in a crockpot bowl in the fridge. Tomorrow we will reheat them slowly in the crockpot (this saves time). The ham is in its pan in the fridge ready to go, too.

Now to clean and ready the turkey.

All I have to do to clean is master bath...dh and I are losing our bedroom/bath for 2 days.

Floors done in the morning, it's raining and my dogs will make them filthy by tomorrow if I do them today!
 
We made Amish Peanut Butter here yesterday and I'm baking MissPrissy's pumpkin pies (4 of them), her pumpkin bread from her blog, a cherry jello that I make every year for the holidays, a breakfast casserole that has to be put together a head of time, and a coffee cake today.

Just finished the caramel brownie trifle. Bread cubes are drying in the oven. Cranberry sauce is done and cooling. Turkey is in the brine. Still have to make the broccoli casserole tonight and then cook the turkey, stuffing/dressing and mac & cheese tomorrow. This is to add to all the other things the rest of my family is making. YUM!
