Thanksgiving Turkey Processing

Hydroswiftrob I asked my husband where that was in the movie and the mom is doctoring the boys eye after he shot himself and the father is picking at the turkey and wanting to know what is going on upstairs and she said everything is fine and you better not be picking at the turkey you will get worms as he is cutting himself a piece. My husband knows that story it seems by heart. Nice looking bird, how long did you smoke it for and how big was it?
Brined in a mixture of soy sauce, sea salt, brown sugar, locally grown honey, crushed red pepper, and a white/black pepper blend for 24 hours. It was 13 lbs. I smoked it for 8 hours at 250*. I put the bacon on after it had been smoking for 4 hours to get the skin nice and brown.

I know someone on here blasted people who blanket turkey. That's fine, to each, their own. I just wanted to post a picture of one I blanketed with a bacon braid and smoked. This was not my own raised bird :(  , but next year I will do this exact same thing with a bird I raise. My bird got ate before my mother-in-laws and that's all that matters. :p




All I can say is :drool. I only want to blast you because you didn't invite me over for dinner. :lau You did a wonderful job on that turkey. It looks amazing. Well done! :thumbsup

Hardest part was trying to figure out how to get the bacon to stay braided. After some thought, I braided it on a cutting board and stuck the cutting board with bacon in the freezer for a few hours. When I pulled it out of the freezer, the bacon was stuck to the cutting board (next time I will spray a little cooking oil on the board), so I had to scrape it off. With the braided blanket frozen, I bent it over the turkey and it managed to stay that way. When I was trying to do it at room temperature, it kept sliding off and undoing itself.

As much as we love turkey, no. When our kids were little, they loved How The Grinch Stole Christmas so much that they wanted 'roast beast' for Christmas dinner. Since we raised sheep, leg of lamb seemed to fill the bill nicely. It's been the holiday tradition ever since. Even though the wee sprouts are now 30 and 27, they still expect to come to our house for Christmas dinner, which must absolutely be succulent, tender, mouth-watering thin slices of 'roast beast'!!!

I was nearly strung up by my heals one year when I suggested we try roast goose! NEVER AGAIN!
