Don't give up on them. I have only ever seen one egg move before pipping. And 21 days is just an average! Also, I have never washed eggs - I'd say most here haven't. If you're having consistently bad outcomes for your hatches, it's not likely to be because you haven't washed your eggs.

This is just my second hatch. The first was 50%, and I'm around 83% as of today. The first eggs I hatched for a friend and I think they were getting old, because I had one ooze through a micro crack in the shell, and two or three others just get totally rotten. This hatch is of my own eggs, mostly speckled sussex and a few pullet eggs I threw in for fun.

For the HAL I picked up some EE/OE eggs, and I'm going to use my own, too. But it's been so rainy here that all the eggs are absolutely filthy. I tried dry cloths and scraping with my fingernail, but they still look awful. :(

Sounds like you are doing pretty good with your hatches! Make sure you candle before setting if any are questionable of having a crack. Don't want those in your bator! Nope! Do you candle on day 7? Will give you an idea which ones to throw out..don't want any rotten ones in there either! They can explode, then, there's a mess, and can make for a less hatch rate.
You can wipe the dirty eggs with a damp cloth if you like, I am one to do as you just said, pick the big stuff off, then set. I haven't had a problem with dirty eggs in my bator. As long as there aren't big big pieces on them. :)

I want to do this HAL so bad, but all I got at the moment is backyard mix eggs. If I hatched them I don't think I would keep them. But I also want to try out my new homemade incubator:( would anybody want them? They would be an Easter egger, Silkie, Cochin mix

I (now) candle before setting, then on day 7, 14, and 18. That first hatch I didn't candle before setting. I couldn't see the crack until I candled, but everyone agreed that the oozing relieved enough pressure that it didn't explode. I did a "sniff test" every day to find the rotten ones, haha. It wasn't my favorite.

The ones in lockdown now I only candled quickly to check the air cells, and didn't check for movement. Now (of course) I wish I'd taken my time.
