Wow those birds are pretty. I am going to try and breed my one too!!! I have a hen that has a crest with a beard and muffs too. Her name is HennyPenny.He is a nice one. If you breed them that way then yes they can have top knots. I've bred some of mine that way on purpose. Here are some:Rooster that I used for one breeding season. He was about 9/10 weeks in this picture.
First one that I bred. Still have her. This isn't a real good picture though.
Second one that I bred. Never used him in the breeding pen. Wished that I had, I've never gotten a rooster (crested) this good since.

The crested gene is out in the general EE population, and now Cream Legbar is being added to the mix, so it could be CL genes and they are blue egg layers too.
I usually breed mine back to the Easter Eggers, I get about 50-50 crested/non-crested. Right now tough I have a new Polish (Red) rooster with them to add just a bit more Polish blood to them.
Then it will be back to EE. Trying to keep the green/blue egg going.
I think I also will be trying to breed like you are!
