Gosh, why didn't I quote all those in the same post? I guess I got distracted and kept finding things to answer later.
I made these copycat Starbucks Pumpkin Cheesecake Muffins. I've never had one at Starbucks because I don't spend money at Starbucks, don't like their company policies or their burnt woodchip coffee (had it once a million years ago when I was a realtor), but thought it might be good. The only thing I didn't have was pumpkin seeds to "candy" to go on top. They are good, but they are really not sweet, so definitely muffins and not cupcakes. And, of course, I used my butternut squash puree rather than pumpkin.
If you like cheesecake and you like butternut squash, you might like them. There are variations of the recipe on the web, I've noticed. And someone said they liked it better, that it had more body/zing to it when they added a little molasses and cocoa powder, so I did that, but half what they said. They are certainly very moist. Could add some streusel topping but I was too lazy. I needed to use some cream cheese that had already been frozen once.
