The FDA and eggs

I read recently that the risk of salmonella from commercial eggs was 1 in 20,000. Not exactly Russian Roulette, eh?

Still, if I was cooking for someone with a compromised immune system, a very young child or an elderly person, I'd take the extra care to make sure any egg dish I prepared was thoroughly cooked.
 
And if you break down the numbers they give it's roughly 1.2 people per state per month that contract salmonella from eggs. Doesn't seem that risky to me!
 
I'm more worried about what I'm tracking into the house on my shoes after I've been to pen. I have small dogs and a geriatic cat.

I have gardening boots and always wear flip flops when I'm in the yard. I change out my shoes/flops in the garage before I enter the house.
 
i drink an 'eggnog' every day- a couple eggs, milk and chocolate in the blender- raw eggs, lots of protien, never have gotten sick from it- but they aren't talking about home raised eggs

Factory eggs from battery cages are risky because the hens live in packed, filthy conditions; they have infections from the cages cutting into their skin, pecking each other, stress, etc. Icky stuff proliferates in that kind of environment and the eggshells are thin and weak due to inadequate nutrition. I don't mind eating raw cookie dough with my own hens' eggs but I wouldn't do it with the eggs you get for $1.09 a dozen at the store! Ew!
 
I eat soft boiled eggs (my chickens have spoiled me from eating commercial ever if I can help it). AND...
I eat raw commercial spinach
Peter pan peanut butter
tomatoes in the garden without washing them first
I live by the ten second rule

I recently scolded the kids for feeding the cat out of their plates, letting the cat lick the bowls...and promptly went out to give the chickens leftovers in my bowl...
 
Remember, these are the people who brought you kudzu! The Government is just a bunch of individuals who could get a job in the real world.
