The Front Porch Swing

Had a great day today, went and picked up 5 free fluorescent light fixtures that I found on craigslist. Yay for more lights for my seedlings!! Also took some picks of the chickies, they are 20 days old, and getting so big!! In order, Clementine, Duchess, Little Lulu, Queenie, and Scootaloo.








 
I'm curious...

What do you guys do with your extra eggs? Besides make custard?

Custard, with some real (real) whipped cream, some chocolate shavings (or cocoa powder dusted) on top and maybe even stick a piece of dark chocolate in the top for her to nom.

That way you get the custard and the chocolate!

That first one looks like hes on stilts.... I love Tweenagers my Guinea keets when they were still bacon heads and sooo "OMG I AM Goinna die... every time I went by.... silly Keets. Way different than chkens but still cute.

ingredients:

  • 1 cup and 1/2 cup sugar
  • 6 large eggs
  • 1 14oz can sweetened condensed milk
  • 2 13 oz cans evaporated milk
  • 1 teaspoon vanilla
Preheat oven to 325 degrees. You will need 6 ramekins or other specialty flan cook ware and a large baking pan to put them in.
Pour 1 cup sugar in warm pan over medium heat. Constantly stir sugar until is browns and becomes caramel. Quickly pour approximately 2-3 tablespoons of caramel in each ramekin, tilting it to swirl the caramel around the sides. Reheat caramel if it starts to harden. "Note from personal experience.... DO NOT try to lick the spoon"
In a mixer or with a whisk, blend the eggs together. Mix in the milks then slowly mix in the 1/2 cup of sugar, then the vanilla. Blend smooth after each ingredient is added.
Pour custard into caramel lined ramekins. Place ramekins in a large glass or ceramic baking dish and fill with about 1-2 inches of hot water. Bake for 45 minutes in the water bath and check with a knife just to the side of the center. If knife comes out clean, it's ready.
Remove and let cool. Let each ramekin cool in refrigerator for 1 hour. Invert each ramekin onto a small plate, the caramel sauce will flow over the custard.
OMG good.
I had a friend who was a four star Chef. Worked Vegas worked most of the high country restuarants around where I live till he opened his own restaurant.... Alberto mixed Mexican with French cuisene.... and he made a Black and Tan dessert which was half Flan and half Devilsfood Cake....
He never gave the recipe though... Hes moved away....

So I'm reading over the old post "The road less traveled..." and I got to the part where you can pee on your feet to cure foot fungus. ....trying to picture how you would pee on your feet - being female. Too much fun. Don't tell me how the gnarly bunch turned out - don't like spoilers.

Deb, the custard recipe over at the One Hundred Dollors A Month blog is very simple and forgiving. I used decent sized duck eggs and skim milk and used a kitcken aid instead of a blender and it was perfect. You can make it more or less eggy as you wish.

Awesome recipe. I can never figure out what to put them in - no remekins. No lil oven save dishes for individuals...
