Good morning everybody! I'm thinking meringue cookies.

I believe I am going to change the spelling of "meringue" because I always have to look it up. ...mer'ang ...mur'ang ...hmm?


I love love merangue cookies! Here in Houston with the humidity, they last all of about 15 min before they are a gooey mess. But I love em
 
Thanks Moxie.... Better today I am getting ready to take Dog food up to My neighbor. He called this morning and took care of the goat. I have a burial place up in the rocks. I am moving forward with my fencing project Sigh... my horse is now without company So I will be looking for a needy soul to live up there.... Most likely another horse or pony. Or maybe a small mule or Mammoth donky... As long as they are good for the farrier and dont need special meds. Or even some more goats....

but I have to have good fence and an electrical chager in place first.

Parts of Ohio did. Not sure what part though. I was going to look since I have a friend in Columbus. My part of Texas got big storms.


I want to start painting my house today. I can't though. :/ I need to work and the house hasn't been properly prepped yet. I need to power wash and scrape. Do some repairs. Oh ya, I need the paint too! I'm hoping it will go on sale soon. I think I can get a good start on things on Easter weekend. :) Would anyone like to help me? I have a nice front porch. No swing, but I do have some chairs. :)

And sure enough we got a lot of rain. No tornadoes or such but RAIN!!!

I have a recipe for you try. It is the best! Very summery too. Just what everyone needs after this horrible winter.

Forgotten Meringue

Preheat oven to 425*

Beat:
6 egg whites (I used the powdered kind but 'real' work too)
1/2 tsp cream of tartar
1/4 tsp salt
1 1/2 c sugar
1 tsp vanilla

Spread into a greased 9x13 pan. When oven reaches 425*, place pan in oven and turn off the oven. Let stand 8 hours (or overnight). Very important - DO NOT OPEN THE OVEN DOOR!
Frost with 1/2 pint whipped cream. Refrigerate until ready to serve. Top with sliced strawberries before serving.

At my house this makes about 8 servings and rarely lasts more than a day or two.

This is a great recipe! And the reason they call them forgotten cookies is because back in the day they were the last cookies made because they were baked last......and forgotten....I usually just spoon them onto a parchment lined cookie sheet.
