The Front Porch Swing

I have had the fixins for quite some time now.  but Have been OBSESSING about not having a Cast Iron Skillet to make it in.    Then i saw some one here at a local chicken meet up who makes them in a disposable cake pan....    SLAP....  thats the sound of my hand slapping my forehead....  LOL.

So as soon as I find the right size I am doing it.

A woman with a plan! Haha! We got a nice cast iron skillet at a yard sale! They sold it to me for five bucks and it's a HUGE one! Boy was I happy. We use it all the time. Now if i can only find a Dutch oven for sale! I have a hard time buying things new. We are a thrifty home. Maybe I'll ask for one for my Christmas and birthday gift.... Hmmm

A house without a caste iron skillet?!?!? That's just not right. :( Deb, if you were near I'd have to give you one for your birthday - just to get your funk shway in order in your house. hahahaha

I have a list of stuff too.... to buy before I move up. Cast iron skillet set.... AND a griddle. Home Canning equipment.... pressure canner, and waterbath.... (you can use those Waterbath caning pots for making tamales too.) Though I am thinking of trying my hand at Canning tamales. in those jars that have the smooth sides.

I need a whole new set of regular pots and pans for up there as well as knives and silverware. My Ex Roommate used mine all up. Oh and a new microwave.... she had the nerve to think I took some of her silverware... sheesh.

I bought my coffee maker at a thrift shop and I love it.... couldnt afford to buy the same type in the store. But living as far away from civilization as I do when i am at home Having things break down becomes an issue. So when i buy appliances I buy new. I also am very done with used furniture.

Funk Shway ... love that!! need some of it in my life.

DH took all the cast iron to Wisconsin. I won't use it on the glass-top stove that we moved back into the house for fear of breaking it. Man, I hate this electric stove. I want my gas range back!!

I am going to make a Solar Food Dehydrator after I move to Wisconsin. I had seen one like this in the past and had drawn up plans, but this one is a little bit better. I like that the food is in a dark box, not sitting out baking under the sunlight losing nutrients.

I will change the door though, it looks like it would be in the way trying to get to the trays.

So I take it the black portion of tht big duct is to heat the air as it travels up and through the dehydrator. I take it there is a screen on the opening of the duct.

GAWD at my place the food would be cooked before it got dehydrated.... LOL. Maybe not.

Home canned grape leaves
I use the small to medium size wild grape leaves gathered when they are young and very tender. The reverse side of the leaf is shiny not fuzzy, The fuzzy ones can be poisonous. Wash the leaves thoroughly. Remove the stems and roll them in stacks of 10 or 15 leaves. Roll into rolls and tie with string. Bring 2 quarts of water to a boil and add 1/2 cup salt. Drop bundles into boiling water for 5 - 10 minutes. Remove from water. Cool slightly. Pack into sterilized pint jars and seal in a water bath 10 to 12 minutes. Cool and check seal.

Dolmades
1 pound ground beef or lamb
1 large onion grated
1 1/2 tb mint leaves, chopped
1 1/2 tb parsley, chopped
1/4 cup raw rice
1/2 tsp dried dill weed or 1/2 tsp dried fennel
Salt and pepper to taste ( I usually micro a small amount before I add the rice to taste for seasoning)
Mix meat, onion, salt, pepper and rice. Add seasonings. Shape in oblong balls. Wrap in grape leaves.
I use a baking dish that will fit the amount I am doing snugly. I cover them with chicken stock and bake them at 350 degrees covered in foil for about 45 minutes. You can remove the foil during the last 10 minutes. They are also served cooked in tomato sauce like cabbage rolls or covered in Avgolemono sauce ( a Lemon -egg sauce.
If you use commercial grape leaves it is better to bring them to a boil, drain water and stuff.
I cannot make enough of these for a party. They go so fast.

That's how I got my dutch oven, Christmas gift from my mom. She knew I would never buy my own. Come to think of it, that's how I got my skillets too.
