Y'all are too much! I am officially hungry!!

Tonights menu includes grilled sage-garlic pork tenderloin, mashed potatoes (the real kind) and corn.

X2 on the making me hungry! Now your making me hungry too! My son has soccer practice tonight, so no fancy dinner for me :( probably just a sandwich or an apple with peanut butter.
 
Last Sunday, at church, I was talking to one of my neighbors. We found we both had lived and worked with the Navajo's in
AZ and NM. Of course the conversation turned to Navajo food. He came over for dinner tonight. Mutton Stew and Fry Bread. I did baked apples with brown sugar and cinnamon for dessert. Couldn't get mutton here so used a lamb breast. Made the soup yesterday and refrigerated it overnight to pull off the fat. Not as "muttony" tasting as we remembered, but good just the same. I used to eat this every Saturday morning that I set up at the Gallup flea market to sell. One of the Navajo families had a food stand that sold the stew. Next time I will make him Green Chile stew. Even though they are called stews they really are soups. Now all I wish for is a bag of Hatch Chiles. Too late this season. Maybe next year. It was nice having company to share food with. I find mealtimes are when I miss Doug the most. I usually eat in front of my computer. Not the best way to enjoy a meal. It also leaves the keyboard messy. LOL.

I would love a recipe or two.... I lived in Roswell from preschool to the first grade. But I dont remember any Navajo food. Probably too young. Folks love Mexican though. spice and flavor... I love Lamb but have never had mutton. Difference is.... Age?

I was tempted to try fry bread from one of the vendors when we visited the Four Corners this summer, but never got any. What does it taste like?

Hi Mamma, glad to hear that you are socializing. It's good to have friends to visit and enjoy good meals. I love green chili stew. Yes I eat many meals in front of my keyboard.

Last night, DS#2 had my place at the computer for supper. It is on the bar in the kitchen so it is not as bad as it seems. Two were in front of the TV and Dh was also at the bar in the kitchen. I went and sat down at the table and two of my sons came by and asked why I was sitting over here all by myself! LOL! Maybe they are not as tuned out as I have been thinking.

We roasted her weeks ago, but I froze the wings and carcass.

Over the weekend I made stock.. On Monday I made some coconut curry with some of it (and all the meat that was left on the bones). Today I am making some white chili with it. I froze the rest of the broth for later. Waste not, want not.
 
I cooked a Dom yesterday. It simmered for quite a few hours. It was definitely stronger in flavor, and a bit "chewey" compared to processed chicken from the store. My 13 y.o. pronounced it to be ineddible, said "It's full of cartilage. It definitely wasn't, b/c I picked all the meat off the bones and returned it to the pot with the veggies. 8 y.o. smacked it down and pronounced it delicious. I didn't tell either one of them the source of the meat. So, any suggestions for making home grown chicken more tender? Perhaps a brine or vinegar bath before hand???

Use a pressure cooker if you have one. My mom used to get stewing chickens to make chicken and dumplings. She would cut the chicken up into pieces and throw it in the pressure cooker. When it was done and the lid was off she would drop spoon fulls of bisquit dough on top to cook in the residual heat....

Did you let it rest properly? Also, the longer it takes for the bird to die, the chewier it gets.. stress hormones. My first bird was close to inedible due to that...

Brine is always good. And low and slow cooking.
