We are having the same dilemma, exacerbated by the fact that we will have a 6 and 7 year old with us and will have to occasionally stop by the kiddo tent to milk a cow or something. My wife wants to do a lot of the cooking and food preservation classes. I want to do more of the homesteading. I think she is going to pass on the chicken butchering class which I think will be my first of the day. Yummy.

I am thinking of doing the chicken butchering also. I have done it but would like to see how they cut them up. I have done it all but cut them up, mom does that. I need to learn how to do that part.too.

We butcher twice a year and own a large chicken plucker. We rent it to other folks all over TN. Sometimes folks come and watch us butcher to learn how before they rent it to do there own.
We have already had our spring butcher day so won't be doing it again until fall but we do keep a sign up calendar for renting the plucker of anyone needs one. We are in Kingston

I built a ghetto fabulous Candler out of an oatmeal can tonight and we candled the eggs under our little silkie. It looked like we were 6/6 on day 14. We also had one extra from our school project that we had gone ahead and stuck under our cochin that was broody also. It was so cool to see the little arteries in that one (day 4).

I would love to see a picture of the Candler if you have one.

This is crazy, but the more I look at them, the more I want a blue laced red Wyandotte!! Wish I could afford a good quality pullet :/ IMO they are the most beautiful birds.
