I'll just say what we do. Depending on what type of meat it is, it may or may not have a dry rub on it, it may or may not sit in the walk-in overnight, and then it's put in the smoker (not a grill) with aromatic wood chips so the meat is cooked with a smoky taste. The length of time in the smoker varies (again, depending on the type or cut of meat).
