I'm not sure I have a favorite... I use different peppers for different flavor profiles and think I kind of love them all...
That is a good point!

My Youngest won't let me use jalapenos she does not like them at all.

One of these days I'm gonna try pequin peppers. Love the flavor and the heat is huge, but I have a chili sauce recipe that requires them. For a lot of reasons, I make mild chili, but a teaspoon of the chili sauce goes a long way (hmmm I use a tablespoon). My son calls it napalm... But it's packed with flavor and matches the seasoning of chili. Don't recommend tasting it by itself though...

ETA: Last guy who did got blisters in his mouth...
growing up, had one bush by the back door for anyone to have at a meal, yes, very hot but a little one goes a long ways, momma use to bottle them in vinegar to use on collards and turnip greens, the vinegar was quite good on the greens

That sounds wonderful...

When I was young... Not going to specify how young. I frequented a bar with the best chili... But it was mild and she provided the chili sauce to increase heat and flavor.... I bugged her for years to get her recipe, but nope it was a family secret. Then one day I called her from Germany and asked again and she gave it to me as she wasn't worried about any German competitors. If I can find it I'll post it here under the terms that no one from Northern Indiana can propagate it.
