The NFC B-Day Chat Thread

I cook mine on medium so they have a chance to set up and when it looks firm around the edges I get the spatula right under the center and gently flip. It’s still plenty runny but the bottom has to be set good.

Hi DMC! It's the flipping thing that gets me every time. I'll give it a try in a bit and see what happens, maybe I'm just not letting the egg stuff set up long enough. If all else fails, I'll have scrambled eggs anyway!

Use a wide spatula! ;)

Good morning Bob! :frow hope you and Sue have a great day! You probably have already said this but did you get the pig processed?
The second one is in the cooler, I'll be breaking her down shortly. Was supposed to do it yesterday, but the day turned into a lazy day.
Hey @rjohns39 you're a good cook...do you make omelettes? I cannot for the life of me figure out how to make them, they turn out like scrambled eggs. Any pointers, anyone?
What type of omelet are you shooting for, the flat rolled kind or the big fluffy kind?

For the flat rolled kind, I add just a touch of milk to three eggs and whisk vigorously. Pre-heat a griddle with non-stick spray on medium low temp and pour out the eggs in the center, then spread them out with a long spatula. Let them set for a couple minutes, then add your ingredients in a line about a spatula's width away from the edge. Lift the edge over the ingredients and then roll it up, leaving seam side down to seal for a minute or two. Slide it onto the plate. Finish for 1 minute in the microwave.

For the fluffy french style folded omelets, you'll need an 8" skillet (non-stick is the best). While you're pre-heating the skillet on medium high heat blend your 3 eggs in the blender on high for a couple three minutes, then pour into the center of the skillet and swish the egg all around and then let them set for a couple minutes. Flip the whole thing (I don't use a spatula, just toss it with the pan). Put your goodies in near the center, let it cook a couple of minutes and then slide it out onto the plate folding it in half. Finish for a minute on high in the microwave.

Good luck. I have a thin spatula that is easy to get under. I can’t do it as well without it. When it breaks I’m in trouble:lol:

Hi Bob! You sound like you’ve made an omelet or two. I only put cheese in mine.

I didn't know there were 2 kinds! I do know there won't be any flipping without a spatula though, it's too early to clean the kitchen floor.

Think I'll try option #2. Wish me luck!

(I have mushrooms & Swiss cheese just begging to be used up.)
