What do you use for a breading on the chicken strips IM? And are they baked or fried?

I'm making the cilantro lime chicken and rice we had once before. It was so good (even the leftovers).

And DH just said he'd like pizza for tomorrow so guess I'm making the dough up today too. It always tastes best after it's sat in the fridge over night.
Toasted panko for the breading. I make the batter with mayo and dijon mustard in it, then press on the panko and bake on a rack. Very good with honey mustard sauce.

I was reading about leaving the dough in the fridge on the bakers thread. Do you bring to room temp before rolling it out? The kids have been after me to make pizza.

Your chicken strips sound good! And I like they aren't fried (that's such a mess to do at home).

Letting the pizza dough sit in the fridge over night (or several nights), gives the crust a more pronounced taste. The recipe I use makes enough for 3 pizzas. I bag each one separately in a flour-dusted zip lock bag, put in the fridge and when I'm ready to make one, I pull it out of the fridge about 2 hours before using.

The boys would have a blast making pizzas, you should give it a try!

In the recipe I talk about using the stand mixer, but I actually just do it by hand in a large bowl. I gave the ingredients by weight, if you don't have a kitchen scale let me know and I'll give you the measurements.
