The water just runs down the gravel driveway. Lots of wet weather streams here as well.

Doesn't that make the gravel wash away, then the road turn into pot holes and then sink holes???

How are you doing health (physical and mental) wise? Slowly progressing on the work it takes to move back to your house?
Yes... to all of it. Down almost 90 now... And lately I have been stocking the kitchen here for up there. Down to spices....

Zatar - found in recipes from Lebanon, Syria, Turkey and Iran
Icelandic Kelp powder - I tasted it and its yummy source of iodine and minerals
Aleppo Pepper - mild pepper from Syria - cant do hot any more
Apple pie spice - used in my apple butter
Clear Jell - Not a spice but can survive canning
Boston Spice - Mainly for making corned beef but pickles too
Prague Powder - for making corned beef or any preserved meat
Ground Cinnamon
Pumpkin pie spice
Culinary mint - I want to do Mint jelly
Black Pepper whole
Herbs De Provence
Molassis- used in some bean dishes
Liquid smoke Hickory
Liquid chicken Bullion
Liquid beef bullion - dont have it yet
browning liquid? - dont know what its called but used in some recipes

I plan to Dehydrate quite a few things

Carrots
Onions
Garlic
Doggie treats - left overs from bone broth plus trimmings
Peas
Tomatoes

Like I said I am setting up my kitchen for up at the house. Once up there I wont be able to do much shopping.
and a few odds and ends...
Cook ware arriving tomorrow White enameled cooking surfices. Not that I am going to cook much up there but I do want to make Ghee. Which is best prepared in White enameled pan... Last one I burned but I jarred it up and It was yummy... tasted carmelized... but cloying in eggs so I used it for sauteing... Same container still a year out on the shelf and hasnt gone rancid...

Pressure canning butter is not recommended but I know that people do it. My issue with theirs is they dont remove the milk solids. Which is part of the National Center for Home Food Preservation books reservations about it. The other part is They haven't tested recipes on it yet.

Last device I want is a portable induction Cook top... I am going to build an island with a canning and roasting station on it. That can be moved to the canning kitchen if I build it. Cooking at a lower level will make it easier for me... I want the pot to be only about eight inches above the level of jar placement.

This way I can see inside the pot and stirr. Then I can see in the side of the jar for fill levels. The shelf should be big enough to put the big roaster in as well for cooking. All my cookware is Induction ready...

I wanted seasonings without salt or sugar... Not the usual fare found in grocery stores. Plus I love middle east style seasonings. The Zatar is mostly Hysopp and a few others... but hysopp has a milder Thyme flavor. plus it has some medicinal qualities.

The kelp is not only for seaoning fish broth and dishes but it can be added to quite a few things. I am not eating Iodized salt But either kosher or pickling... So it will serve as a source of Iodine and minerals

I am immersed in the home canning and cooking for preparedness. Like others have spoken about here. Like I said I bought a new freezer and have it set up in the garage. It is now full of Chicken Pork Beef and fish. turkey as well.

Salmon heads for Fish stock. Which will be canned
Meats get seared off for color and seasoned....
Beef roasts for Canning Roast beef chunks seasoned with zatar
Pork roasts for Canning Pork roast chunks Seasoned with Zatar
Chicken for Canning whole thighs seasoned with lemon and Zatar
Chicken breast chunks for Canning seasoned With lemon and poultry seasoning.
and Herbs De provence

Bones and Bits of left over trimmings will be made into stock.... Which will be canned but some of it will get frozen to add bone broth to my diet. The canning process destroys the geletin chain. Anything with Cartillage or bone marrow will be added. Poultry bones will be cracked to aid in the process.
Bones get roasted a bit before adding to the stock pot... All the Roasting juices will be added as well. Oh and Vinegar to help the extraction process.

If you process the bones for a second time for Bone broth then the bones will be easily crushed and powdered for bone meal for the garden.

Nose to tail.... even if I dont get to Buy a whole pig or beef anything that comes in to the place will be used...

You will be setup for living up at your place for sure. I need to work on canning some things too.
 
About 3 weeks ago a guy was doing 65 in a 35, texting, crossed the centerline, head on collision with a car. Killed both of the people in the car. I have no idea what his sentence will be but it should include a bazillion hours of community service going to high schools and telling how he killed 2 people because he just HAD to text something. He was older than that age but that is likely the best place to have a captive audience. MAYBE if it is raw enough one or two people might just think twice about texting and driving and save some lives. BTW it is illegal in VT to use ANY hand held device while driving.
