After years of struggling with rice, I was gifted a used rice cooker a few years ago, and I love it. Goodwill is a good place to check for a used one at a reasonable price so you can try one out without spending much money, but at this point I'm convinced it is the only way I will ever be able to cook rice properly.

I bought a rabbit, a male being sold for meat, as my male for a rabbit meat project. Fellow had been raising them for a long time and said he would make a fine father of meaties. I just don't think I can kill a rabbit. I envy that others can do it.
I can't do it, but DH said he will. And we are hoping that others may want some around here also...

Starts with GOOOOOOOD mashed potatos.

Cut up potatos
chopped onion
salt
1/3 water, bring to boil, simmer to really soft. don't let go dry.

Pour off extra water and save.
add butter
add milk
add pepper
and more salt to taste
MASH by hand-- not a mixer. Add saved water to loosen if necessary.

THe above we use at meals, then use the left overs.

Mash up cold mashed potatos;
add 1 egg for each cupish
add 1 tablespoon flour for each cupish

Mix well. YOu can play with the seasonings again at this point and add more onion ifyou like.

Hot skillet of butter and oil, or bacon fat, and fry up by spoonfulls. Use a medium heat and let those pancakes set up well before flipping, CHeck they don't get over browned though--burned is yuuuucky.

IF not completely cooked thru, put in oven to finish while other batches are frying up.

We don't eat much rice, so can't help you there. THe closest we get is wild rice in the chicken soup--well cooked. lol

.
I love potato pancakes!

I'm proud of you too, DiDi! Keep up the good work and fight through the days you want to have "just one." Been there, done that and I know how hard it is. I have been smoke free for 17 years, and though it is not tempting to bum one anymore, I still have moments when my body says. "If I was still smoking, I would have one right now." It happens at the strangest, most random times, too. Anything that has that much control over your mind and body is to be avoided like the plague!

The first three weeks are the hardest, then it gets gradually easier. After that, people let their guard down and starting back happens accidently. Just keep repeating - NO! I don't smoke anymore!

Random amusing observation - My filter at work makes it impossible to search for images of "Naked Necks" and it REALLY didn't want me to research whether or not "Pussy Willow" would grow in my zone.
