Also, did you add pectin? Pectin is like an insurance policy.
It does not really matter--Strawberry syrup is very tasty.
I followed the recipe and as such added 2 pouches of liquid pectin. I just wasn't sure about the temp (220 for 2 minutes). I got it to a rolling boil for 2.5 minutes, hoping that would be enough.
I have read it can take up to 2 weeks to gel, but I've never had anything gel after that long that hasn't gelled in the first 24 hours.
Either way, refrigerated it has thickened up a bit and would likely be fine as (runny) jam. Being that it was 88 here today... it's an ice cream topping and we're not ashamed of it!

I was thinking the same thing.guys I hate to be a party pooper but, as I was enjoying stories of your ancestry, years and place of birth, mother's maiden names etc. etc. it suddenly dawned on me that this is just the type of information some perp needs to steal your identify.
I know your info is safe with us but, who knows how many thousands of strangers are lurking even as I write this. I know such info is also plucked off of other social sites.
