When I get to that stage, I start checking my neck in the mirror for signs of gills forming (does anybody else remember "ontogeny recapitulates phylogeny"?)

For those of you who are talking about warm temperatures, sun burns, rain, or other weather that is associated with temperatures over let's say 40 degrees, keep in mind it could be a lot worse.

That is our forcast this week. Just sayin'...

I used to have this problem at work then I bought rain boots. Sure I look like an idiot they don't exactly match scrubs but worth it.

That's 5 days of snow in the next 8.5 days.

I've got to go out shortly and shovel the junk that fell last night so that I can start fresh again on Tuesday.

THis is the original that I started with. TOnight I make it with ground flax-- and 1/2 oz bitter choc melted in the center. I have also used up to 2tsp bran with good results. Understand this is designed for low cab eaters-- I usually eat less than 20 carbs a day, so 7 carbs is a big deal and a real cupcake would be disastrous for my way of eating. My kids love it and ask for it often. Easy peasy.

Healthy Instant Chocolate Cake
Makes 1 large serving

Ingredients:
1/2 Tablespoon unsalted butter**
4 teaspoons half and half cream OR lite coconut milk( I use heavy cream)
1/16 teaspoon sea salt

1/2 teaspoon vanilla ( or use peppermint extract)
1/2 beaten egg ( gee, WOnder why I use a whole egg .. . )
5 Tablespoons almond flour, gently packed ( Bob's red mill is one source. )

2 teaspoons coconut flour ( omit if you want to.)
2 Tablespoons erythritol OR 2 Tablespoons Truvia (I use splenda)
3-4 packets good-tasting stevia ( I omit this)
1 Tablespoon unsweetened cocoa powder (recommended: Hershey’s Special Dark cocoa powder)
1/8 teaspoon baking soda -- I omit this for a fudgie texture and nuke 45 sec
1/4 teaspoon vinegar (apple cider or white)--I omit this.

**For a dairy-free/paleo version of this cake, use coconut oil or nonhydrogenated organic shortening and lite coconut milk. You can use a tablespoon of honey and the listed amount of stevia to sweeten it.

Preparation:
Add butter, half and half or coconut milk, and sea salt to mug. Melt for 30 seconds on HIGH in microwave, or until butter is liquified. Add vanilla and drizzle egg into mug while whisking it with a fork. Add the dry ingredients and whisk thoroughly with fork until batter is smooth and evenly mixed. Whisk in vinegar. Slap the bottom of the mug with the palm of your hand 10-20x to pop air bubbles. Place in the center of the batter a square or two of 70% cocoa chocolate or sugar-free milk chocolate for a gooey, melty center. Microwave mug on HIGH for 1 minute, 15 seconds, or until batter has cooked through. Let cool 1 minute. Top with s squirt of whipped cream or a dab of low carb cream cheese frosting if desired. Eat!

To bake this cake in the oven, preheat oven to 375 degrees Fahrenheit. Set mug on a cookie sheet and bake cake for 10 minutes, checking to see when the cake is firm and springy in the center.

~7.4g net carbs, 368 calories (without the square of Lindt 70% chocolate)

The hardest "Look at, Savor then walk away" for me is any type of Chocolate

I mean I have been to CA meetings, the shock you each time you taste one, chocolate covered yuckies, anything to break my chocolate cravings...

I win more than lose but that is still my main weakness. i have it under control, but, even I break down sometimes
and get some type of chocolate once in awhile.

When I do get the missus a box of sweets etc, the first thing I tell her to do is hide them. and she does, she knows I can smell a piece of chocolate a mile away.

I don't eat sugar anymore when I have cravings under control. THe trick is to not eat sugar. Or flours. ANd it's a little more complicated than that. I eat lots of 'sweets" , I just use splenda for the sugar, and nut flours for the wheat flour. NOthing like a bit of yummy chocolate cake. I'm eating one now.
