I know this isn't chickens or horses, but my kitchen smelled wonderful yesterday and I love sitting with my cup of coffee and listening for the sound of success (aka the "pop" of all those lids setting seal on the apple sauce). All the rain this year kicked our apple trees into over drive and they blessed us with bushels of wild and northern Wolf River apples.

Now it's enjoying some morning brew, waiting for the storms to pass to be sure our power is going to hold, then it's on to round two and the apple butter!!!

A sweet sound indeed - hope your power holds and you are able to get the rest of your canning done today. My sister has an apple tree that was in serious overdrive this year too -- so much so that the weight of the fruit caused the loss of one big limb, we weren't here in time to do much with the apples this year, but I know where I'm getting some next year to put up applesauce and pie filling!

I planted a wolf river a few years ago. Still waiting for it to produce.

I'm overrun by tomatoes, though.

Just made another 6 cans of stewed. My pantry is overflowing with tomatoes.
I can't wait to get back into canning this next year - the new house has this lovely shelving in the "spare room" (my best guess is that it was at one point a garage that has been converted into part of the house - is now the utility room, mud room and will be a nice dining area when we have family over as the kitchen has a very small dining area that maxes out at having one guest) that I can just envision filled with jars of all sorts of goodies! The house we are in now has this huge side yard area that could make a lovely garden........

Tart apples make a good pie filling. I'm available for taste testing....just saying...

Oh, yes, they are the best for pies!

I have a Ball Auto-Canner.

I wash and slice and then process the tomatoes in the Victorio, add onions, garlic, herbs, red wine, salt and pepper to the resultant puree and reduce it down in a long simmer. Put in pint jars with 1/2 t. salt + 1/4 t. citric acid, put on the lids and rims and push a button. The Auto-Canner does the rest.

The chickens love the left over tomato skins/residue expelled from the Victorio.
 
OK, so does this Victorio remove what happens to be my bane when it comes to the illustrious tomato? the seeds? When I do tomatoes I end up with a back ache for weeks afterwards. I par boil then peel and then de-seed, then chop up for whatever I intend to use them for. I like small chunks of tomato, I don't want all sauce/puree, but the seeds (and skins) and I, just don't get along.
