It's about 78 degrees here now. It will be 90 tomorrow, until the rains, then it will go back down. The low is 74 for tomorrow night. Neener, neener....Don't worry though, it will be HOT by August, and even worse in September. It was not hot here during the winter, but no snow, no ice, no freezing blizzards, except at Dairy Queen.
I am very excited! The cheddar I made was very good but takes two months to cure. I plan on starting a Gouda next weekend. Gouda takes three months!
I am using Mesophilic starter from cultures for health. It works with milk that is not ultra pasteurized. If the label has UHP on it then it wont work. It is fairly easy to find milk that works.Ron that cheese looks amazing .I did a cheese workshop a dew years back. Are you able to find unpasteurized milk there
The recipe I found is for a spicy gouda--jalapenos or serranos for the spice.I love smoked gouda![]()
