Happy Thanksgiving to all.

The coffee is hot ,turkey smells great, watching the parade with my little man. Looks like it'll be a good day....Well except going to the sales later.
 
Watching the game, making sweet potato pie and getting ready to mix up the mashed potatoes. What am I thankful for? All you guys and the help I've gotten this year from BYC!
 
what dog show? What am I missing?? I hardly ever watch tv so

How big a bird? How long in the egg? How'd you do it? We're going to do ours Sunday probably. I made my stuffed winter squash (vegetarian) and went to BF's family's Thanksgiving today so we'll do our turkey this weekend. Fresh tarragon is also a good poultry seasoning


We had a 12 lb 8 oz Turkey. I brined it over night. I used a cup of salt, 1cup of brown sugar, 2 Tablespoons each of garlic powder, onion powder and black pepper corns. I ground the pepper corns in a mini grinder. I put a half gallon of water on to boil in a large pot and added the other ingredients plus a large bundle of fresh rosemary any some fresh thyme. Feel,free to use your favorite herbs. Stir as it is heating to make sure everything is disolved.

I removed the thawed turkey from the wrapper and took the giblets out and placed it into a cooler large enough to hold the turkey. I added ehough ice to fill the pot to cool the brine and add volume pour the brine over the turkey and add ice and water to cover the turkey and keep it cold while it is brining. I let mine soak over night.

I set my Big Green Egg to 350 degrees and it took about 3 hours to cook to 165 degrees. Use what ever technique you need for indirect heat. The BGE has a ceramic heat shield called a plate setter between the fire and the turkey. I has cut outs to allow the smoke to flow through.

This produces a juicy and flavorful turkey. I use the same process for chicken and pork roasts.

Equal amounts of salt, garlic and onion powder, Adolph's Meat Tenderizer and black pepper is used as a rub in some of San Antonios best restaurants for brisket.

I hope yours turns out a good as mine did today.
